Retro Sunday – Squirrel

The Joy of Cooking cookbook was first published in 1931 with many revisions and publications over the years. My copy was published in 1997. I’ve never spent much time looking through The Joy of Cooking and haven’t prepared many recipes from it but while looking for content for Retro Sunday I happened to turn to page 515 and came across guidelines for skinning and preparing squirrel.

Although, squirrels are a nuisance – terrorizing my dog, breaking into our garbage cans, eating the bird food – I don’t think I could bring myself to eat squirrel and I could never skin one. There are plenty of squirrels around my neighbourhood but I sure hope it never reaches the point where I have to start hunting them for food.
